Forget Me Nots

This easy "cookie" recipe is going to be your new go-to dessert. They're called Forget Me Nots but I've been referring to them lately as meringue cookies because that's slightly more descriptive and conveys more what the cookie is to folks. Forget Me Nots is still descriptive because you "forget" them in the oven. So they're unique and easy! This recipe was passed to me from my mother.

Forget Me Nots [Meringue Cookies]
Ingredients
2 egg whites
2/3 c sugar
1 tsp vanilla
16 oz semi-sweet chocolate chips [I used mini chocolate chips and maybe more like 12 oz]
1/2 c chopped nuts
pinch salt

Directions
Preheat oven to 350F. Beat eggs until stiff. Add sugar and salt. Then add vanilla, chocolate chips, and nuts. Grease cookie sheet and drop the mixture on sheet.


Place in oven and cut oven off after you put them in. Leave 3-4 hours or overnight. [This is the "forget" part]
