Meal Plan Monday Post

Happy Labor Day! Hope everyone has enjoyed the long holiday weekend. We sure have - we had fun at a waffle bar party Saturday evening and then relaxed at a leisurely Sunday lunch before catching Mission Impossible: Rogue Nation. And checked off quite a few things on the "house to-do" list.

As for the meal plan we are back in business with our CSA! The farm took a short month off from CSA delivery as they transition from their spring/summer session to their fall / winter session. We couldn't be more pleased to be getting our box of veggies back. Our pickup day is Thursday so to get us until delivery day we picked up some produce from Costco over the weekend. I reversed my usual meal plan then grocery shopping strategy. While we shopped at Costco we bought all of our favorite produce and then I meal planned around what we selected - mushrooms, avocado, red peppers, and spinach were the main focus.

Meal Plan for Monday August 1 - Sunday September 6

Monday - Turkey sandwiches with avocado-ginger relish, spinach salad

Tuesday - Japanese eggplant with fresh tomato sauce and ricotta

Wednesday - Tuna melts
Thursday - Fish, corn and cheddar fritters with sauteed cherry tomatoes atop spinach

Friday Grilled shrimp and squash, green beans
Saturday - Breakfast Plum poppy seed muffins

   Lunch Spinach salad with pears, farmer's cheese, and candied pecans
   Dinner DIY waffles and chicken bar supper at a friend's
Sunday - Brunch Muffins and granola-yogurt parfaits
   Lunch Brixx and then movie matinee
   Dinner Veggie quesadillas, black beans and rice
