Meal Plan Monday Post

It has been hot! hot! hot! Patrick and I had a full week. I was a little behind on meal planning at the beginning of the week so we grabbed some chili out of the freezer and roasted fingerling potatoes from our CSA. On Tuesday night I went to a Canning / Preserving class and I'm looking forward to canning some of summer's bounty! The weekend was filled with lots of social events - a dinner club get together, an outing with my parents, and hosting neighbors for Sunday dinner! Oh - and there was homemade peach ice cream!

Meal Plan for Monday June 15 - Sunday June 21

Monday - chili, roasted fingerlings

Tuesday - evening canning/preserving class! ate separately; I met my dad for dinner
Wednesday - stir fry
Thursday - pork tenderloin, chard quinoa salad, roasted filet beans

Friday - Dinner Club (we brought broccoli slaw and chocolate chip cookies)
Saturday - Daytrip to Lake Gaston!
Breakfast smoothies
Lunch food truck at Rosemont winery's art festival
Dinner chicken tenders, potato salad, and caprese salad (thanks Mom!)
Sunday - Brunch hash browns, bacon, and eggs

   Dinner turkey pesto meatballs, salad, peach ice cream and snickerdoodles for dessert
