Last week's meal plan features many home-cooked meals since we had been dining out quite a bit throughout the beginning and middle of the month. We enjoyed quite a few of these meals outside on the back deck. Our CSA is starting to have more and more veggies to choose from so our meals are transitioning into light delicious summer fare.
Meal Plan for Monday May 25 - Sunday May 31
Monday - Watermelon and tomato salad with balsamic vinaigrette, shrimp and avocado
Tuesday - Chinese chicken salad
Wednesday - Nacho night
Thursday - Cod with roasted veggies, mixed greens salad
Friday - Gnocchi with chard and white beans
Saturday - Fresh pasta with beets, goat cheese, arugula
Sunday - Brunch bacon, eggs, grits, and cornmeal pancakes
Dinner fridge leftovers / hodge-podge
Container gardening - herbs in the small pots!
