Meal Plan Monday Post

Hello November! And just like that daylight savings time has ended and Thanksgiving is quickly approaching. I mentioned in one of these meal plan posts that September was super laid back for us and we executed quite a bit of house to-do projects while October was go-go-go! November is go-go-go too. We did a lot of cooking last week but I did allow us a Friday date night on the town since we didn't let crazy days get to us with slipping in Chinese takeout. Chinese takeout ultimately slipped in though as we were out of power all day Sunday and with no electricity to cook we needed to feed ourselves! I also canned piccalilli last week which is a green tomato relish.

Meal Plan for Monday October 26 - Sunday November 1

Monday - Ginger beef stir fry
Tuesday - Orzo with caramelized fall veggies
Wednesday - Quinoa with roasted eggplant and vinaigrette
Thursday - Dinner with friends for pumpkin carving; bring a salad and bottle of wine
Friday - Date night - dinner on Franklin St and a planetarium show
   Brunch Buttermilk pancakes with applesauce
   Dinner Potato soup, cornbread
Sunday - We had just grabbed a pantry breakfast (yogurt granola parfaits) when the electricity went out! We ate lunch at Panera and killed time walking around Southpoint. The power was expected to be back on midafternoon but that was pushed to 8pm so we grabbed Chinese. Worst day ever to have an extra hour!
