Quick Fried Rice

Patrick's go-to Chinese take out order is Chicken Fried Rice. In all of our days of dating, being engaged, and being married I don't think I've ever seen him order anything other than Chicken Fried Rice! I, myself, like a bit of variety.

Fried Rice isn't the exactly the easiest take out dish to replicate and this was definitely sub-par to take out. I just don't think you can beat take out Fried Rice! But this is tasty and satisfies the craving. I loosely followed this Shrimp Fried Rice recipe.


Quick Fried Rice
Ingredients
2 cups brown rice, already cooked
2 eggs
1/2" of ginger, diced
1 red pepper, diced
4-5 green onions, white and green parts sliced
peanut or vegetable oil
2 c frozen peas, thawed
1 small can water chestnuts, drained and diced
1 small can baby shrimp, drained

Directions
Heat peanut oil in wok
Scramble 2 eggs and add to wok
Once egg has cooked, make a space in the bottom and add diced ginger
After 30 seconds add in diced red pepper and sliced green onion
Saute for about 5 minutes
Push veggie mixture up the sides and add some sesame oil to the bottom of the wok
Throw in brown rice, peas, sliced water chestnuts, and baby shrimp
Continue to saute and stir constantly
