Scallops and apples

In a few weeks one of the weekly challenges is going to be consuming all grains as whole grains. We have worked over the past few years to slowly make that change. Patrick grudgingly buys whole grain items when he is sent to the store to pick up a few items (whole wheat English muffins in particular). We actually like the whole grain options so it wasn't a terribly difficult transition to make. 

We buy our whole wheat pasta from Trader Joe's and stash it in OXO containers like so: 


It's nice to have the pasta on hand and when I'm doing shopping at Trader Joe's I can pick up a bag of whatever I'm running low on. Anyway I was chatting with a friend who said she wanted to do better on the whole grains front. So I started browsing the Trader Joe's website to see if I could find the pasta to show her what I buy (couldn't find it) but I did stumble upon this yummy recipe that featured the whole wheat spaghetti and scallops!


Scallops with Apples and Leeks from Trader Joe's
   2 servings
Ingredients
5 ounces TJ's whole wheat spaghetti
2 slices bacon, chopped
1 Granny Smith apple, diced
1 leek, chopped
3-4 leaves sage, chopped
salt and pepper, to taste
6 sea scallops, thawed

Directions
Cook pasta according to package directions & set aside. Sauté bacon in pan until fat is rendered, about 1-2 minutes. Add apple, leek and sage. Add salt and pepper; cook until tender, about five minutes. Add scallops and cook over high heat until just cooked, one to three minutes. Serve atop Trader Joe's whole wheat spaghetti.


We served with a spinach side salad.
