Oatmeal

In Week 1 of our food challenge I had to figure out how to incorporate two fruits and vegetables into every meal. This was tough for the weekday breakfasts but we figured everything out and enjoyed eating the fruits and vegetables. Quick weekday breakfasts don't lend themselves to utilizing vegetables so we mainly incorporated two fruits.

On one particular morning I decided to make oatmeal. We have oats in our pantry because Patrick really likes this Baked Oatmeal for weekend brunch. I don't know why I hadn't thought to make them on the stove top before now! So I did and for that week I put blueberries into the oatmeal and served it with an orange. Like this:


While I was making the oatmeal that morning the can suggested I try swirling in Nutella and adding bananas to the oatmeal. I thought that sounded delicious and knew Patrick would like that. He had recently requested Nutella and Raspberry Crepes so we still had Nutella in the pantry (Nutella isn't something we always have in the pantry).

After cooking the oatmeal according to package directions I stirred in a tablespoon or two of Nutella into the oats and then after serving into bowls topped with a banana. Like this:


Obviously this didn't have a second fruit but it did have one and before our challenge started we weren't always having fruits or vegetables with every meal. And thinking outside of the box during the food challenge made me try making stove top oatmeal!
