Buttermilk Waffles with Fresh Strawberries

Whitney and I have been enjoying the waffle iron she got me for Christmas with a tasty mix from Williams-Sonoma, but this time we finally decided to make our own! Strawberries are my favorite topping, so we sliced up fresh strawberries and mixed them with a little sugar. The result was some amazing waffles, and I can't wait to do this again! Here's the buttermilk waffle recipe from The New Best Recipe:

1 c all-purpose flour
1 tbsp cornmeal (optional)
1/2 tsp salt

1/4 tsp baking soda
1 large egg, separated
7/8 c buttermilk
2 tbsp unsalted butter, melted and cooled

Heat waffle iron. Whisk dry ingredients together in medium bowl. Whisk egg yolk with buttermilk and melted butter. Beat the egg white until it just holds a 2-inch peak. Add liquid ingredients to dry ingredients in thin, steady stream while mixing gently with a rubber spatula. Toward the end of mixing, use a folding motion to incorporate ingredients. Gently fold egg white into batter. Cook appropriate amount of batter in waffle iron until golden brown.

Gently mixing
I loooove strawberries!
A wonderful breakfast!
